You don’t need to be too precise about ingredients! Serves four with a chunky soup lunch

  • Half an onion chopped
  • One large potato, cubed in 1cm squares
  • One carrot, grated
  • Dash of olive oil

Saute in a pan until soft. Add

  • 1 garlic clove, crushed and chopped
  • Quarter head of cabbage, chopped

Saute a bit more. Add

  • 1 tin white beans e.g. canellini
  • 1 litre rich chicken stock
  • Salt and pepper

Simmer for 15 minutes. It should all be soft but not soggy. To serve, swirl in a teaspoon of pesto in each bowl. Wild Garlic Pesto is awesome.
